Hamburger Stew

IĀ LOVE vegetable soup and Jake will only eat a meal with meat, so I combined the two and came up with hamburger stew. After the holidays I was craving some veggies. I like easy lunches and made a batch of this soup to eat throughout the week. Go make this..you won’t be disappointed!

Brown ground beef with onion, garlic, and celery.

Add the rest of your ingredients.

Stir and bring toĀ a boil. Turn heat down and cover pot. Simmer until potatoes are tender, about 20 minutes.

Serve with a salad or a grilled cheese. Yum!

Hamburger Stew

  • 1 lb lean ground beef
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 celery stalks, diced
  • 1 orange bell pepper, diced
  • 1 green bell pepper, diced
  • 4 carrots, sliced thin
  • 5 red potatoes, chopped
  • 1 bag frozen corn
  • 1 (14.5 oz)Ā can diced tomatoes
  • 2 Tablespoons tomato paste
  • 3 cups beef broth
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon dried oregano
  • salt & pepper, to taste
  1. In a large pot or Dutch ovenĀ over medium-high heat, brown the ground beef with the onion, celery, and garlic. Drain fat.
  2. Add the rest of the ingredients. Stir to combine and bring to a boil. Reduce heat and cover with lid. Simmer until potatoes are tender, about 20 minutes.
  3. Serve alongside a grilled cheese and salad. Enjoy!
